I don’t mind though, it’s nice to know that I can pick these up at any time and get started.

I love having a project on the go that you can pick up ad hoc, particularly in the evenings. And can't wait to see what this one becomes…those fabrics are divine;-)
I have a similar stack, though not as nice as yours!
How wonderful. The thing with hexes is you could make a tiny pincushion or a huge quilt… it's hard to know how long to keep going before you use them!
I'm currently cutting up tiny half-inch hexes. Insane. But I've also ordered some larger paper pieces so I can hopefully make a quilt. Maybe. One day.
